I recently tried this recipe I found in Oxygen Magazine for Chocolate Chip cookies, and I have to say they are delicious. They are so good in fact that I wanted to share the recipe with you. Of course, being the master chef that I am, I have made some minor changes to the original recipe which I think make them even better.
- 1 cup unsalted almond butter well stirred
- 1/2 cup brown sugar
- 1 large egg
- 1/2 tsp baking soda
- 1/4 tsp sea salt
- 3 oz dark chocolate chunks
- 1/4 cup chopped walnuts
Pre heat oven to 350 degrees F. In a mixing bowl, combine the first five ingredients until smooth. Add chocolate chunks and chopped walnuts and fold in. Spray a baking sheet with non stick spray, put pre shaped balls of cookie dough and bake for 10 minutes or until golden brown. Allow to cool for a couple of minutes on the cookie sheet, then transfer to a cooling rack. Store in an air tight container.
The great thing about these cookies is that they are full of healthy fats from the nuts and egg, and contain antioxidants found in the dark chocolate.
Give this recipe a try and don’t feel too guilty about eating chocolate chip cookies again.
