Looking for a healthy option for dinner but don’t know where to start?  Here is an option you don’t want to pass up.  Seafood lettuce wraps are full of healthy omega 3’s, easy on the waistline, taste delicious, and are quickly assembled.  For this recipe you could choose any fish you want, but I suggest keeping it with a lighter variety such as Snapper, Salmon, Cod, or Halibut

  • 4 fillets of fish (Snapper, Salmon, Cod, or Halibut)
  • 1 Tbsp of canola oil
  • butter lettuce leaves (Choose the larger ones)
  • 2 whole tomatoes, diced
  • 1 long english cucumber peeled and julienned
  • 1 avocado, peeled and diced
  • 1 cup fresh bean sprouts
  • 1 cup carrots, shredded or julienned

Marinade for the fish

  • 1 Tbsp minced garlic
  • 1 Tbsp minced ginger
  • 2 Tbsp finely chopped cilantro
  • 1/2 lime juiced
  • zest of 1 lime
  • ground black pepper
  • Note : The fish should not sit in the marinade for  more than 1/2 hour.

Sauce for the lettuce wraps

  • 1 cup plain yogurt
  • juice of 2 limes
  • 1/2 jalapeno minced (if you like your spice, you can add more)
  • 2 Tbsp finely chopped cilantro
  • salt and pepper to taste

Begin by preheating your grill and remove fish from marinade.  Lightly brush fish and grill with canola oil.  Grill the fish until cooked through and set on plate.  Meanwhile, in a small bowl, combine garlic, ginger, yogurt, jalapeno, cilantro, lime juice and salt and pepper.  Mix well and refrigerate until ready to eat.

Fill each lettuce leaf with tomatoes, cucumber, sprouts, carrots and fish.  Drizzle yogurt sauce on top.  Fold each lettuce leaf into a wrap and serve.  Enjoy these lettuce wraps any time of year.
