I love pizza and any excuse possible I can come up with, I will eat it. When you are trying to lose weight or simply trying to maintain your figure, pizza is one of those foods that is just not on the list of healthy choices. I have an option for those who still want to have a cheat meal and not feel like they are wasting away their hard work. Below is a recipe for a pizza with some healthier options. Keep in mind you really can add what ever toppings you like, these just happen to be my favorite.
Pesto Chicken Pizza
- Whole wheat tortilla
- Left over grilled chicken tossed in pesto
- Tomato sauce
- sun-dried tomatoes, thinly sliced
- Yellow peppers, thinly sliced
- Black olives, thinly sliced
- Asparagus, blanched and sliced
- Boconcinni cheese, sliced into rounds
Begin by heating your over to 375 degrees. Spray a baking sheet with non stick spray and place the tortilla on it. Build your pizza by adding the tomato sauce, the cheese and then the rest of the toppings. Bake for 10 minutes or until the tortilla is crisp. Serve immediately and enjoy.
What I love about this pizza is that it is not all dough and cheese and you can interchange different ingredients to make more exotic tastes and flavors. Have fun with your creations and be creative.
